5 Days Of #NotSadDeskLunch Ideas

Desk lunch doesn’t have to mean sad lunch. Gone are the days when all we have to look forward to are stale sandwiches or warmed up (yet somehow always cold-in-the-center) leftovers. All hail the #NotSadDeskLunch!

Plus, to celebrate the launch of Prince & Spring Food Storage Containers, our new fave lunch containers, we’re sharing five tried-and-true #NotSadDeskLunch ideas to get you through the week. This new container set, which comes with 18 containers and matching lids, is microwave, dishwasher and freezer safe, which makes bringing lunch to work a breeze.

Springtime pasta salad

Make this easy pasta salad recipe the night before so the pasta can soak up all the delicious flavors. We love farfalle, rotini or elbows for a pasta salad, and with our Barilla Pasta Variety Pack you can have all three! The night before, cook 2 cups of Barilla Pasta, drain and stir through a big dollop of Barilla Pesto Sauce. Add some sliced grape tomatoes and drizzle with Prince & Spring Italian Extra Virgin Olive Oil. Chill overnight.

Chicken and corn salad crackers

These creamy, crunchy, corny chicken salad crackers are a one-hand wonder and just the thing to eat when you’re catching up on emails – or Instagram. Mash a can of Swanson Chicken Breast with 2 Tablespoons Hellmann’s Real Mayonnaise, stir through 1/4 cup Libby’s Sweet Corn, and spread over Saltines or Wheat Thins.

Quinoa bowls are all over Instagram, so why shouldn’t your desk lunch join the ‘gram game? We like to keep Seeds of Change Quinoa & Brown Rice pouches in our desk drawer for super quick and healthy lunches. Just microwave a pouch which takes all of 90 seconds, then fork through a can of Bumble Bee Tuna, and give it a shake of Frank’s RedHot.

Couscous cups

While your colleagues are waiting in line at that overpriced salad bar, you can be the boss of the break room with these cute couscous cups. Just add Near East Couscous to your fave mug and follow the instructions to microwave. Our Near East Couscous Variety Pack comes in 3 Mediterranean flavors so you can mix things up, but try adding chopped Nutbox Walnuts and Lindsay California Ripe Pitted Olives for an extra flavor bomb.
