It’s been showing up in our lunches and dinners, and even our breakfasts and desserts. Not just a superfood, quinoa is our go-to grain for summer dishes when you want something a little lighter, but packed with flavor. Nutty, fluffy, and just a little chewy, try swapping out rice or pasta for quinoa and we think you’ll fall hard, just like we did.

1. Toasted Almond and Coconut Quinoa Porridge
Inspired by this Food52 recipe, this is the indulgent quinoa breakfast to wake up to this weekend. Cook Prince & Spring Organic Quinoa in coconut milk, maple syrup and water until fluffy, then add a little extra coconut milk to thin it out while still hot. Top with crushed Prince & Spring cinnamon almonds, raisins, and Dang toasted coconut chips.
2. Kitchen Sink Quinoa Frittata
Frittata is the ultimate nothing-to-cook-but-don’t-want-takeout quick meal. Got half an onion lurking in the back of your fridge? A stray mushroom that’s seen better days? Throw all those odds and ends — and some leftover quinoa — in a pan with beaten eggs and cook gently. Delicious hot, cold or room temperature, it’s perfect summer picnic fare, too.
3. Cheat’s Lentil Dal with Quinoa

Nothing comforts like a bowl of dal, but in summer the last thing we want is to sweat it out in a hot kitchen for hours as the lentils and spices become one. Our cheat version has dinner on the table in 15 minutes: while you boil up a batch of quinoa, heat a pack of Tasty Bite Madras Lentils (ready in 1 minute!), then spoon over the quinoa for a nutritious, filling meal.
4. Tex-Mex Quinoa Bowl

Quinoa bowls are still taking over chic menus everywhere, but you can make your own for half the price. We like this Tex-Mex version using Prince & Spring organic quinoa, Goya sweet corn, Goya red kidney beans, a shake of red pepper flakes, and a tortilla chip crunch.
5. Maple Quinoa Granola

Quinoa adds a fantastic pop of crunch to granola, and the best thing is you can completely customize it depending on what you love, or love less. Our go-to quinoa granola recipe combines Quaker old fashioned oats, Prince & Spring organic quinoa, Prince & Spring almonds, raisins, maple syrup, and a sprinkle of cinnamon, baked low and slow until you get those delicious clusters. Devour by the handful.
