It’s easy to get overwhelmed with menu planning leading up to Thanksgiving. So when we paired up with Food52’s master butcher Cara Nicoletti, we were sold on her no-nonsense approach to cooking.
Cara’s motto? Buy spices in bulk and season everything in sight! Cara has created a genius seasoning mix that works on everything from turkey to roast veggies, and we have a feeling it’s going to save our sanity these holidays.
“Having a go-to rub at the ready is a great way to take the stress out of advanced seasoning. Buy your salt and dry spices in bulk! It takes a long time for them to go bad, and you’ll always have the ingredients you need on hand to make a quick seasoning mix.”
Here’s Cara’s one spice mix to rule them all recipe. Go forth and use it with abandon on everything this Thanksgiving and beyond. We love it on mid-week chicken thighs, steak and baked fish, and it’s incredible at jazzing up sides from roast potatoes to cauliflower and cheese.
Universal Seasoning recipe
- 1/4 cup paprika
- 2 teaspoons ground black pepper
- 1 tablespoon + 1 teaspoon granulated garlic
- Salt to taste (about 1/8 of a cup)
Here’s how: Throw everything into an airtight container. Use it all the time!
What’s even more amazing about this universal seasoning is that it’s also highly adaptable. Cara suggests adding cumin and Mexican oregano for a Southwestern flavor; rosemary, lemon zest, and red pepper flakes give it an Italian bent; mix in some garam masala for an Indian-inspired spice rub…the possibilities are endless.
